Shrimp Ratatouille

An Easy Summer Favorite for the Whole Family!


  • 2 tablespoons plus 1 teaspoon olive oil
  • 1 red onion, roughly chopped
  • 3 cloves garlic, minced
  • 1 medium eggplant, cut into 1-inch cubes
  • 2 zucchinis, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 tablespoon fresh thyme, chopped
  • 1 28-ounce can chopped tomatoes
  • 1 cup green olives, pitted
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1-pound large shrimp, shelled and cleaned
  • 1/4 cup fresh mint, chopped
  • 1/4 cup sliced almonds, toasted


1) Heat 2 tablespoons of the oil in a heavy pot over medium heat. Add the onion; cook 5 minutes. Add the garlic; cook 2 minutes. Add the eggplant, zucchini and bell peppers; cook 5 minutes. Add the thyme, tomatoes, olives, red pepper flakes, salt and black pepper. Reduce heat to medium low; simmer 20 minutes.
2) In a large nonstick skillet, heat remaining oil. Add shrimp and cook 2 minutes on each side.
3) Stir shrimp into ratatouille.
4) Spoon onto plates. Garnish with mint and almonds; serve.

Summer is finally here! You are probably more than ready to enjoy dinner al fresco and head to some fun pool parties. Of course, to make the most of your summer events, you will want to bring a delicious dish. We can help! Here is a recipe to tasty cheesesteak sliders.

  • 7 tablespoons of olive oil
  • 1 pound of beef tenderloin
  • 2 large bell peppers
  • 2 onions
  • 16 dinner rolls
  • 1 ½ cups of shredded provolone cheese
  • Salt and pepper

Preheat your oven to 375. Cut the beef tenderloin, bell peppers, and onions into thin strips.

In a large skillet, heat three tablespoons of the oil. Season your beef with salt and pepper, then cook in your skillet on high for three minutes on one side. Flip, then cook for two more minutes.

In that skillet, heat the remaining oil. Add the peppers and onions, season with salt and pepper, and cook until softened (about 8 minutes).

On a large baking sheet, place the beef and vegetables on one half of the dinner rolls. Sprinkle with cheese. Bake until the cheese is melted (about 6 minutes). Top with the other half of the rolls and serve warm. Enjoy!
